- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 large flour tortillas
- 1 cup cooked black beans
- 1 cup corn kernels
- 1/2 cup diced tomatoes
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup salsa
Instructions
- Preheat grill to medium-high heat.
- In a small bowl, mix together the olive oil, chili powder, cumin, garlic powder, onion powder, salt, and black pepper to create a marinade.
- Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken. Let it marinate for 10 minutes.
