  • Grill the chicken for 6-7 minutes on each side, or until fully cooked. Remove from grill and let rest for 5 minutes.
  • While the chicken is resting, arrange the mozzarella and tomato slices on a serving platter, alternating and overlapping them.
  • Drizzle the remaining 1 tablespoon of olive oil over the mozzarella and tomatoes, and season with a pinch of salt and pepper.
  • Slice the grilled chicken and place on top of the mozzarella and tomatoes.
