Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup balsamic vinegar
- 2 tablespoons honey
- 1 tablespoon olive oil
- Salt and pepper to taste
- 8 cups mixed salad greens
- 2 cups sliced fresh strawberries
- 1/2 cup crumbled feta cheese
- 1/4 cup sliced almonds
- 1/4 cup balsamic vinaigrette dressing
Instructions
- Preheat grill to medium-high heat.
- In a small bowl, whisk together 1/4 cup balsamic vinegar, 2 tablespoons honey, and 1 tablespoon olive oil. Season with salt and pepper.
- Place chicken breasts in a resealable plastic bag and pour the marinade over the chicken. Seal the bag and massage the marinade into the chicken. Let marinate for 10 minutes.
- Grill the chicken for 6-7 minutes on each side, or until cooked through. Remove from grill and let rest for 5 minutes before slicing.
- In a large bowl, combine 8 cups mixed salad greens, 2 cups sliced fresh strawberries, 1/2 cup crumbled feta cheese, and 1/4 cup sliced almonds.
- Divide the salad mixture onto 4 plates and top each with sliced grilled chicken.
- Drizzle each salad with 1 tablespoon of balsamic vinaigrette dressing.
