  • 2 boneless, skinless chicken breasts
  • 1/2 pound of large shrimp, peeled and deveined
  • 1 head of romaine lettuce, chopped
  • 1 cup of cherry tomatoes, halved
  • 1/2 cup of grated Parmesan cheese
  • 1/4 cup of Caesar dressing
  • 1 zucchini, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 2 tablespoons of olive oil

  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Instructions

  • Preheat the grill to medium-high heat.
  • Season the chicken breasts and shrimp with salt, pepper, and a drizzle of olive oil.
  • Grill the chicken for 6-7 minutes per side, or until cooked through, and grill the shrimp for 2-3 minutes per side, or until pink and opaque. Set aside to cool slightly.
  • In a large bowl, toss the zucchini, bell pepper, and red onion with 2 tablespoons of olive oil, salt, and pepper. Grill the vegetables for 3-4 minutes per side, or until tender and slightly charred. Set aside to cool slightly.
  • Once the grilled ingredients have cooled, slice the chicken into strips and arrange the chicken, shrimp, and grilled vegetables on top of the chopped romaine lettuce in a large serving bowl.
  • Add the cherry tomatoes and grated Parmesan cheese to the bowl.
  • Drizzle the Caesar dressing over the salad and toss to combine.
  • Serve immediately and enjoy!
