Instructions

  • In a large bowl, whisk together 1 1/2 cups of flour, 2 tablespoons of sugar, 2 teaspoons of baking powder, 1/2 teaspoon of baking soda, and 1/4 teaspoon of salt.
  • In another bowl, mix 1 1/2 cups of Greek yogurt, 2 large eggs, and 1/2 teaspoon of vanilla extract until well combined.
  • Gradually add the wet ingredients to the dry ingredients, stirring until just combined. If the batter is too thick, add 1/2 cup of milk and mix until smooth.
  • Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  • Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  • Repeat with the remaining batter, greasing the skillet as needed.
