Instructions

  • Preheat the broiler in your oven.
  • In a large bowl, whisk together 6 large eggs, 1/4 cup milk, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  • Stir in 1/2 cup crumbled feta cheese, 1/4 cup sliced Kalamata olives, and 1/4 cup chopped red onion.
  • In a 10-inch non-stick, oven-safe skillet, heat 2 tablespoons of olive oil over medium heat.
  • Pour the egg mixture into the skillet and cook for 5-7 minutes, lifting the edges to allow the uncooked eggs to flow underneath, until the bottom is set and the top is still slightly runny.
  • Place the skillet under the broiler and broil for 3-4 minutes, until the top is set and golden brown.
