Ingredients
- 6 large eggs
- 1/4 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup crumbled feta cheese
- 1/4 cup sliced Kalamata olives
- 1/4 cup chopped red onion
- 2 tablespoons olive oil
Instructions
- Preheat the broiler in your oven.
- In a large bowl, whisk together 6 large eggs, 1/4 cup milk, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- Stir in 1/2 cup crumbled feta cheese, 1/4 cup sliced Kalamata olives, and 1/4 cup chopped red onion.
- In a 10-inch non-stick, oven-safe skillet, heat 2 tablespoons of olive oil over medium heat.
- Pour the egg mixture into the skillet and cook for 5-7 minutes, lifting the edges to allow the uncooked eggs to flow underneath, until the bottom is set and the top is still slightly runny.
- Place the skillet under the broiler and broil for 3-4 minutes, until the top is set and golden brown.
- Remove from the oven and let it cool for a few minutes.
- Slice the frittata into wedges, serve, and enjoy!
