Instructions

  • Preheat the oven to 375°F (190°C).
  • In a small bowl, mix together the goat cheese, sun-dried tomatoes, garlic, oregano, salt, and black pepper.
  • Using a sharp knife, cut a pocket into the side of each chicken breast.
  • Stuff each chicken breast with the goat cheese and sun-dried tomato mixture, dividing it evenly among the 4 breasts.
  • In a large oven-safe skillet, heat the olive oil over medium-high heat.
  • Sear the stuffed chicken breasts for 2-3 minutes on each side, until golden brown.
  • Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  • Remove from the oven and let the chicken rest for 5 minutes before serving.
  • Slice and serve the stuffed chicken breasts with your favorite side dishes. Enjoy!
