Ginger Garlic Tofu Stir-Fry

Ingredients
- 1 block of firm tofu, drained and cubed
- 2 tablespoons of cornstarch
- 2 tablespoons of vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup of broccoli florets
- 1/2 cup of snow peas
- 3 green onions, chopped
- 1 tablespoon of fresh ginger, minced
- 3 cloves of garlic, minced
- 1/4 cup of soy sauce
- 2 tablespoons of rice vinegar
- 1 tablespoon of brown sugar
- 1 teaspoon of sesame oil
- 1 tablespoon of cornstarch dissolved in 2 tablespoons of water
- Cooked rice, for serving
Instructions
- In a large bowl, toss the cubed tofu with 2 tablespoons of cornstarch until evenly coated.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the tofu and cook until golden and crispy on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.
- In the same skillet, heat the remaining 1 tablespoon of vegetable oil. Add the sliced bell peppers, broccoli, and snow peas. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Add the green onions, minced ginger, and garlic to the skillet. Cook for 1-2 minutes until fragrant.
- In a small bowl, whisk together the soy sauce, rice vinegar, brown sugar, and sesame oil. Pour the sauce into the skillet and bring to a simmer.
- Stir in the cornstarch mixture and cook for 1-2 minutes until the sauce has thickened.
- Add the crispy tofu back into the skillet and toss to coat with the sauce and vegetables.
