  • 3 green onions, chopped
  • 1 tablespoon of fresh ginger, minced
  • 3 cloves of garlic, minced
  • 1/4 cup of soy sauce
  • 2 tablespoons of rice vinegar
  • 1 tablespoon of brown sugar
  • 1 teaspoon of sesame oil
  • 1 tablespoon of cornstarch dissolved in 2 tablespoons of water
  • Cooked rice, for serving

  • In the same skillet, heat the remaining 1 tablespoon of vegetable oil. Add the sliced bell peppers, broccoli, and snow peas. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  • Add the green onions, minced ginger, and garlic to the skillet. Cook for 1-2 minutes until fragrant.
  • In a small bowl, whisk together the soy sauce, rice vinegar, brown sugar, and sesame oil. Pour the sauce into the skillet and bring to a simmer.
  • Stir in the cornstarch mixture and cook for 1-2 minutes until the sauce has thickened.
  • Add the crispy tofu back into the skillet and toss to coat with the sauce and vegetables.
