  • 1/4 cup of chicken broth
  • 2 green onions, chopped
  • Cooked rice, for serving

  • 1/2 cup of sliced carrots
  • 1/4 cup of chicken broth

Instructions

  • In a small bowl, mix together 2 tablespoons of soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of rice vinegar, 1 tablespoon of sesame oil, and 1 tablespoon of cornstarch. Set aside.
  • Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add 1 tablespoon of minced ginger and 4 cloves of minced garlic. Stir-fry for 30 seconds until fragrant.
  • Add the peeled and deveined shrimp to the skillet and stir-fry for 2-3 minutes until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  • In the same skillet, add 1 red bell pepper, 1 cup of snap peas, and 1/2 cup of sliced carrots. Stir-fry for 2-3 minutes until the vegetables are tender-crisp.
  • Return the shrimp to the skillet and pour in 1/4 cup of chicken broth. Stir in the sauce mixture and cook for 1-2 minutes until the sauce thickens and coats the shrimp and vegetables.
