  • 1 block of firm tofu, drained and cubed
  • 2 tablespoons of soy sauce
  • 2 tablespoons of cornstarch
  • 2 tablespoons of vegetable oil
  • 4 cloves of garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup of broccoli florets
  • 1 cup of snap peas
  • 1/4 cup of vegetable broth
  • 1 tablespoon of sesame oil
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Instructions

  • In a bowl, toss the cubed tofu with 2 tablespoons of soy sauce and 2 tablespoons of cornstarch until evenly coated.
  • Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the tofu and cook until crispy and golden brown, about 5-7 minutes. Remove the tofu from the skillet and set aside.
  • In the same skillet, heat the remaining 1 tablespoon of vegetable oil. Add the minced garlic and cook for 1 minute until fragrant.
  • Add the sliced bell peppers, broccoli, and snap peas to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  • Pour in the vegetable broth and add the crispy tofu back to the skillet. Stir in 1 tablespoon of sesame oil and season with salt and pepper to taste.
  • Continue to cook for another 2-3 minutes, stirring occasionally, until everything is heated through.
  • Serve the garlic tofu and vegetable stir-fry over cooked rice or noodles. Enjoy!
