Instructions

  • In a small bowl, mix together 1/4 cup soy sauce, 2 tablespoons olive oil, minced garlic, and grated ginger.
  • Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 30 minutes.
  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Remove the chicken from the marinade and discard the excess marinade. Cook the chicken for 6-7 minutes on each side, or until no longer pink in the center. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the broccoli florets and sauté for 3-4 minutes, or until they are bright green and slightly tender.
  • In a small bowl, whisk together the chicken broth and cornstarch. Pour the mixture into the skillet with the broccoli and bring to a simmer. Cook for 2-3 minutes, or until the sauce thickens.
  • Return the chicken to the skillet and coat it with the sauce. Cook for an additional 2-3 minutes, or until the chicken is heated through.
  • Season with salt and pepper to taste.
  • Serve the garlic chicken and broccoli over cooked rice and enjoy!
