  • Add the seasoned scallops to the skillet and cook for 2-3 minutes on each side until golden brown and cooked through. Remove the scallops from the skillet and set aside.
  • In a separate pot, bring the chicken broth to a boil. Add the orzo and cook according to package instructions until al dente. Drain any excess liquid.
  • In the same skillet used for the scallops, melt the remaining 1 tablespoon of butter. Add the cooked orzo to the skillet and toss to coat in the garlic butter.
  • Divide the orzo among serving plates and top with the cooked scallops. Sprinkle with grated Parmesan cheese and garnish with fresh parsley.
