Instructions

  • Preheat the grill to medium-high heat.
  • Rinse the scallops and pat them dry with paper towels.
  • In a small saucepan, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant. Stir in the chopped parsley, salt, and black pepper. Remove from heat and set aside.
  • Thread the scallops onto skewers, brush with olive oil, and season with a pinch of salt and pepper.
  • Place the scallop skewers on the preheated grill and cook for 2-3 minutes on each side, or until they are opaque and grill marks appear.
  • During the last minute of grilling, brush the garlic butter sauce over the scallops, allowing it to melt and coat the scallops.
  • Remove the scallops from the grill and transfer to a serving platter. Drizzle any remaining garlic butter sauce over the top.
