Instructions

  • Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together 2 cups of flour, 1 tablespoon of baking powder, and 1 teaspoon of salt.
  • Cut in 1/2 cup of cold, cubed unsalted butter until the mixture resembles coarse crumbs.
  • Stir in 1 cup of shredded mozzarella cheese.
  • Make a well in the center and pour in 3/4 cup of milk. Stir until a soft dough forms.
  • Turn the dough out onto a lightly floured surface and knead gently 8-10 times.
  • Roll out the dough into a 1/2-inch thick rectangle. Sprinkle minced garlic and 1/4 cup of grated parmesan cheese over the dough.
  • Fold the dough in half and gently press down to seal in the garlic and parmesan.
  • Cut the dough into 12 squares and place them on the prepared baking sheet.
  • Bake for 12-15 minutes, or until golden brown.
  • In a small bowl, mix 1/4 cup of melted unsalted butter with 1 teaspoon of dried parsley flakes.
  • Brush the garlic and parmesan biscuits with the butter mixture while still warm.
  • Serve and enjoy!
