Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1 cup shredded mozzarella cheese
- 3/4 cup milk
- 2 cloves garlic, minced
- 1/4 cup grated parmesan cheese
- 1/4 cup unsalted butter, melted
- 1 teaspoon dried parsley flakes
Instructions
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together 2 cups of flour, 1 tablespoon of baking powder, and 1 teaspoon of salt.
- Cut in 1/2 cup of cold, cubed unsalted butter until the mixture resembles coarse crumbs.
- Stir in 1 cup of shredded mozzarella cheese.
- Make a well in the center and pour in 3/4 cup of milk. Stir until a soft dough forms.
- Turn the dough out onto a lightly floured surface and knead gently 8-10 times.
- Roll out the dough into a 1/2-inch thick rectangle. Sprinkle minced garlic and 1/4 cup of grated parmesan cheese over the dough.
- Fold the dough in half and gently press down to seal in the garlic and parmesan.
- Cut the dough into 12 squares and place them on the prepared baking sheet.
- Bake for 12-15 minutes, or until golden brown.
- In a small bowl, mix 1/4 cup of melted unsalted butter with 1 teaspoon of dried parsley flakes.
- Brush the garlic and parmesan biscuits with the butter mixture while still warm.
- Serve and enjoy!
