Instructions

  • In a small bowl, combine 2 cloves of minced garlic and 1/2 teaspoon of salt. Mash together with the back of a spoon to form a paste.
  • Add 1/2 cup of mayonnaise, 1 tablespoon of lemon juice, and 1/4 teaspoon of black pepper to the garlic paste. Mix well to combine.
  • While whisking constantly, slowly drizzle in 1/4 cup of extra virgin olive oil until the aioli is thick and creamy.
  • Taste and adjust seasoning if necessary.
  • Refrigerate for at least 30 minutes before serving to allow the flavors to meld together.
  • Use as a dipping sauce for fries, a spread for sandwiches, or a topping for grilled meats.
