Instructions

  • Peel the plantains and cut them into chunks. Place them in a large pot with 4 cups of water and bring to a boil. Cook until the plantains are soft, about 15-20 minutes.
  • In a separate bowl, mix the cassava flour with 1 cup of water to form a smooth, stretchy dough. Shape the dough into small balls and set aside.
  • In another pot, heat the peanut butter over medium heat, stirring constantly until it becomes fragrant and slightly darker in color, about 5 minutes.
  • Add the chopped onion, tomatoes, and bell pepper to the peanut butter and cook for another 5 minutes, stirring occasionally.
  • Pour in the chicken or vegetable broth and stir to combine. Add the cooked, shredded chicken if using, and season with ground cayenne pepper, ground ginger, and salt. Simmer for 10 minutes.
  • While the soup is simmering, use a potato masher or wooden spoon to mash the cooked plantains in the pot until smooth and lump-free. This is your fufu.
  • Serve the fufu alongside the groundnut soup, garnished with chopped cilantro. Enjoy!
