Instructions

  • Peel the ripe plantains and cut them into diagonal slices, about 1/2 inch thick.
  • In a large bowl, combine 2 cups of cassava flour, 1 cup of water, and 1 teaspoon of salt. Knead the mixture until it forms a smooth, elastic dough.
  • Divide the dough into small balls and set aside.
  • Heat vegetable oil in a frying pan over medium heat. Once the oil is hot, add the plantain slices and fry until golden brown on both sides. Remove from the oil and place on a paper towel to drain excess oil.
  • In a separate pot, bring water to a boil. Add the dough balls and cook for about 10-15 minutes, or until they are soft and cooked through.
  • Using a wooden spoon or a potato masher, mash the cooked dough until it becomes smooth and stretchy, forming the fufu.
  • Serve the fufu with the fried plantains and enjoy!
