Fufu and Fried Plantains

Created by: Howcan Team

Ingredients

  • 4 ripe plantains
  • 2 cups of cassava flour
  • 1 cup of water
  • 1 teaspoon of salt
  • Vegetable oil for frying

Instructions

  • Peel the ripe plantains and cut them into diagonal slices, about 1/2 inch thick.
  • In a large bowl, combine 2 cups of cassava flour, 1 cup of water, and 1 teaspoon of salt. Knead the mixture until it forms a smooth, elastic dough.
  • Divide the dough into small balls and set aside.
  • Heat vegetable oil in a frying pan over medium heat. Once the oil is hot, add the plantain slices and fry until golden brown on both sides. Remove from the oil and place on a paper towel to drain excess oil.
  • In a separate pot, bring water to a boil. Add the dough balls and cook for about 10-15 minutes, or until they are soft and cooked through.
  • Using a wooden spoon or a potato masher, mash the cooked dough until it becomes smooth and stretchy, forming the fufu.
  • Serve the fufu with the fried plantains and enjoy!

West African

Fufu and fried plantains are traditional West African dishes with a rich history. Fufu, a staple in countries like Ghana and Nigeria, is made from boiled and mashed starchy vegetables like cassava, yams, or plantains. It's often served with soups or stews. Fried plantains, a popular side dish, are sweet and savory when ripe and fried to perfection. Renowned chefs like Zoe Adjonyoh, known for her Ghanaian cuisine, have popularized these dishes in the UK. In West Africa, street vendors and local eateries serve the best versions of these dishes, showcasing the region's vibrant culinary heritage. Getting the texture of fufu just right and achieving the perfect caramelization of fried plantains are crucial for an authentic experience.
