Ingredients
- 2 cups shredded cooked chicken
- 1 cup shredded cheddar cheese
- 1/2 cup diced onion
- 1/4 cup chopped fresh cilantro
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 12 (6-inch) corn tortillas
- 3 tablespoons vegetable oil
Instructions
- In a large bowl, mix 2 cups of shredded cooked chicken, 1 cup of shredded cheddar cheese, 1/2 cup of diced onion, 1/4 cup of chopped fresh cilantro, 1 teaspoon of ground cumin, 1/2 teaspoon of chili powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Place a small amount of the chicken mixture onto each corn tortilla and roll tightly.
- In a large skillet, heat 3 tablespoons of vegetable oil over medium-high heat.
- Place the rolled tortillas seam side down in the skillet and cook until golden brown and crispy, about 3-4 minutes per side.
- Remove from the skillet and place on a paper towel-lined plate to drain any excess oil.
- Serve hot with your favorite toppings such as salsa, guacamole, and sour cream. Enjoy!
