Instructions

  • In a large bowl, mix 2 cups of shredded cooked chicken, 1 cup of shredded cheddar cheese, 1/2 cup of diced onion, 1/4 cup of chopped fresh cilantro, 1 teaspoon of ground cumin, 1/2 teaspoon of chili powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  • Place a small amount of the chicken mixture onto each corn tortilla and roll tightly.
  • In a large skillet, heat 3 tablespoons of vegetable oil over medium-high heat.
  • Place the rolled tortillas seam side down in the skillet and cook until golden brown and crispy, about 3-4 minutes per side.
  • Remove from the skillet and place on a paper towel-lined plate to drain any excess oil.
  • Serve hot with your favorite toppings such as salsa, guacamole, and sour cream. Enjoy!
