Instructions

  • Pour in the beef broth and bring to a boil. Reduce heat, cover, and simmer for 1.5 to 2 hours or until the oxtail is tender.
  • In a separate pan, heat the annatto seeds and cooking oil. Strain the oil and discard the seeds, leaving behind the annatto oil.
  • Add the annatto oil to the pot of oxtail. Stir in the peanut butter and ground toasted rice. Simmer for 10 minutes, stirring occasionally, until the sauce thickens.
  • Add the eggplant, bok choy, and string beans. Cook for an additional 5-7 minutes or until the vegetables are tender.
  • Season with salt and pepper to taste.
  • Serve the Kare-Kare hot with a side of shrimp paste (bagoong). Enjoy!
