Ingredients
- 2 lbs oxtail, cut into 2-inch pieces
- 1 cup peanut butter
- 1/2 cup ground toasted rice
- 1/2 cup annatto seeds (achuete)
- 1 onion, chopped
- 4 cloves garlic, minced
- 6 cups beef broth
- 1 eggplant, sliced
- 1 bunch bok choy, chopped
- 1/2 lb string beans, cut into 2-inch pieces
- 1/2 cup shrimp paste (bagoong)
- 3 tablespoons cooking oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the cooking oil over medium heat. Sauté the garlic and onions until fragrant.
- Add the oxtail pieces and cook until browned on all sides.
- Pour in the beef broth and bring to a boil. Reduce heat, cover, and simmer for 1.5 to 2 hours or until the oxtail is tender.
- In a separate pan, heat the annatto seeds and cooking oil. Strain the oil and discard the seeds, leaving behind the annatto oil.
- Add the annatto oil to the pot of oxtail. Stir in the peanut butter and ground toasted rice. Simmer for 10 minutes, stirring occasionally, until the sauce thickens.
- Add the eggplant, bok choy, and string beans. Cook for an additional 5-7 minutes or until the vegetables are tender.
- Season with salt and pepper to taste.
- Serve the Kare-Kare hot with a side of shrimp paste (bagoong). Enjoy!
Filipino Kare-Kare is a traditional Filipino stew known for its rich and savory peanut sauce. This dish has a long history dating back to the pre-colonial era, where it was originally made with meat, vegetables, and ground peanuts. Today, it is commonly prepared with oxtail, tripe, and vegetables such as eggplant and string beans. The dish is often flavored with shrimp paste and served with a side of bagoong, a fermented shrimp paste. Some renowned chefs and restaurants in the Philippines, such as Abe and Kanin Club, are famous for their exceptional Kare-Kare. The best version of this dish can be found in Pampanga, known as the culinary capital of the Philippines. The key to a delicious Kare-Kare lies in the slow-cooking process and the quality of the peanut sauce, which should be creamy and flavorful. While oxtail is the traditional choice of meat, some variations use pork hocks or seafood for a unique twist on this classic dish. Whether enjoyed in a bustling eatery in Manila or a home kitchen in Pampanga, Filipino Kare-Kare is a beloved dish that showcases the rich and diverse flavors of Filipino cuisine.
