Ingredients
- 4 large eggs
- 1/4 cup crumbled feta cheese
- 1/2 cup diced tomatoes
- 1 tablespoon olive oil
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley
Instructions
- In a bowl, beat the 4 large eggs until well combined. Season with salt and pepper to taste.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
- Pour the beaten eggs into the skillet and cook for 2-3 minutes, lifting the edges with a spatula to let the uncooked eggs flow underneath.
- Sprinkle the 1/4 cup of crumbled feta cheese and 1/2 cup of diced tomatoes over one half of the omelette.
- Fold the other half of the omelette over the filling and cook for another 2-3 minutes, or until the eggs are set and the cheese is melted.
- Slide the omelette onto a plate and sprinkle with 2 tablespoons of chopped fresh parsley.
