Ingredients
- 4 salmon fillets
- 1 cup of crumbled feta cheese
- 2 cups of fresh spinach, chopped
- 2 cloves of garlic, minced
- 1 tablespoon of olive oil
- 1 teaspoon of dried oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 375 degrees F.
- In a small skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.
- Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let it cool slightly.
- In a bowl, mix the cooked spinach, crumbled feta cheese, and dried oregano. Season with salt and pepper to taste.
- Cut a pocket into each salmon fillet, being careful not to cut all the way through. Stuff each fillet with the feta and spinach mixture.
- Place the stuffed salmon fillets on a baking sheet lined with parchment paper. Drizzle with a little olive oil and season with salt and pepper.
- Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
