  • Cut a pocket into each salmon fillet, being careful not to cut all the way through. Stuff each fillet with the feta and spinach mixture.
  • Place the stuffed salmon fillets on a baking sheet lined with parchment paper. Drizzle with a little olive oil and season with salt and pepper.
  • Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
