Instructions

  • Add the chopped onion and minced garlic, and sauté until fragrant, about 3 minutes.
  • Add the turkey sausage to the pot and cook until browned, breaking it up with a spoon as it cooks.
  • Stir in the soaked and drained black beans, chicken broth, bay leaves, cumin, paprika, salt, and pepper.
  • Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 1.5 hours, stirring occasionally.
  • After 1.5 hours, remove the lid and continue to simmer for an additional 30 minutes, or until the beans are tender and the liquid has thickened to your desired consistency.
  • Taste and adjust seasoning if necessary.
  • Serve the turkey sausage feijoada hot, accompanied by white rice, collard greens, and orange slices.
