Turkey Sausage Feijoada

Ingredients
- 1 pound of turkey sausage
- 1 onion, chopped
- 4 cloves of garlic, minced
- 2 cups of black beans, soaked and drained
- 4 cups of chicken broth
- 2 bay leaves
- 1 teaspoon of cumin
- 1 teaspoon of paprika
- Salt and pepper to taste
- 2 tablespoons of olive oil
Instructions
- In a large pot, heat 2 tablespoons of olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until fragrant, about 3 minutes.
- Add the turkey sausage to the pot and cook until browned, breaking it up with a spoon as it cooks.
- Stir in the soaked and drained black beans, chicken broth, bay leaves, cumin, paprika, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 1.5 hours, stirring occasionally.
- After 1.5 hours, remove the lid and continue to simmer for an additional 30 minutes, or until the beans are tender and the liquid has thickened to your desired consistency.
- Taste and adjust seasoning if necessary.
- Serve the turkey sausage feijoada hot, accompanied by white rice, collard greens, and orange slices.
