Spinach and Cheese Fatayer

Ingredients
- 4 cups of all-purpose flour
- 1 teaspoon of salt
- 1 teaspoon of sugar
- 1/4 cup of olive oil
- 1 1/2 cups of warm water
- 1 tablespoon of active dry yeast
- 1 tablespoon of olive oil
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 10 ounces of fresh spinach, chopped
- 1 cup of feta cheese, crumbled
- 1/2 cup of shredded mozzarella cheese
- 1/2 teaspoon of ground black pepper
- 1/2 teaspoon of ground sumac (optional)
- 1/2 teaspoon of salt
Instructions
- In a large bowl, combine 4 cups of flour, 1 teaspoon of salt, and 1 teaspoon of sugar.
- In a small bowl, mix 1/4 cup of olive oil, 1 1/2 cups of warm water, and 1 tablespoon of active dry yeast. Let it sit for 5 minutes until foamy.
- Pour the yeast mixture into the flour mixture and knead until a smooth dough forms. Cover the bowl with a kitchen towel and let the dough rise in a warm place for 1 hour.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 finely chopped onion and 3 minced garlic cloves, and cook until softened.
- Add 10 ounces of chopped fresh spinach to the skillet and cook until wilted. Remove from heat and let it cool.
- In a large bowl, combine the cooked spinach mixture, 1 cup of crumbled feta cheese, 1/2 cup of shredded mozzarella cheese, 1/2 teaspoon of ground black pepper, 1/2 teaspoon of ground sumac (optional), and 1/2 teaspoon of salt.
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Punch down the dough and divide it into 12 equal pieces. Roll each piece into a circle about 6 inches in diameter.
- Place a spoonful of the spinach and cheese mixture in the center of each dough circle. Fold the edges of the dough over the filling, pinching the dough together to form a triangle.
- Place the fatayer on the prepared baking sheet and bake for 15-20 minutes, or until golden brown.
- Allow the fatayer to cool for a few minutes before serving. Enjoy!
