Falafel Pita Pocket

Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons all-purpose flour
- 2 tablespoons olive oil
- 4 pita bread rounds
- 1 cup shredded lettuce
- 1 large tomato, diced
- 1/2 cup diced cucumber
- 1/4 cup tahini sauce
Instructions
- In a food processor, combine 1 can of chickpeas, 1/2 cup chopped onion, 2 cloves of minced garlic, 1/4 cup chopped fresh parsley, 1 teaspoon ground cumin, 1 teaspoon ground coriander, 1/4 teaspoon cayenne pepper, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Pulse until mixture is coarsely ground.
- Transfer the mixture to a bowl and stir in 2 tablespoons of all-purpose flour. Form the mixture into 12 small patties.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Cook the falafel patties for 3-4 minutes on each side, or until golden brown and crispy. Remove from the skillet and drain on paper towels.
- Warm the pita bread rounds in the oven or microwave according to package instructions.
- Cut the pita bread rounds in half and open each half to form a pocket. Stuff each pita pocket with shredded lettuce, diced tomato, diced cucumber, and 3 falafel patties.
- Drizzle each pita pocket with 1 tablespoon of tahini sauce. Serve immediately and enjoy!
