Spicy Extra Vegetable Japchae

Ingredients
- 8 ounces sweet potato noodles
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 small onion, thinly sliced
- 1 medium carrot, julienned
- 1 red bell pepper, thinly sliced
- 1 cup spinach
- 1 cup mushrooms, sliced
- 1/2 cup gochujang (Korean red chili paste)
- 3 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon sesame oil
- 1 tablespoon sesame seeds
- Salt and pepper to taste
- Green onions for garnish
Instructions
- Boil a pot of water and cook the sweet potato noodles according to package instructions. Drain and rinse with cold water. Set aside.
- In a small bowl, mix together gochujang, soy sauce, brown sugar, sesame oil, and sesame seeds to make the spicy sauce. Set aside.
- Heat 1 tablespoon of vegetable oil in a large pan over medium heat. Add garlic and onion, and sauté until fragrant.
- Add carrot, bell pepper, spinach, and mushrooms to the pan. Stir-fry for 3-4 minutes until the vegetables are tender. Season with salt and pepper.
- Push the vegetables to one side of the pan and add the remaining 1 tablespoon of vegetable oil. Add the cooked sweet potato noodles and pour the spicy gochujang sauce over the noodles and vegetables.
- Stir-fry everything together for another 2-3 minutes until the noodles are well coated with the sauce and heated through.
- Transfer the Japchae to a serving dish and garnish with chopped green onions.
- Serve hot and enjoy!
