  • 1 red bell pepper, thinly sliced
  • 1 cup spinach
  • 1 cup mushrooms, sliced
  • 1/2 cup gochujang (Korean red chili paste)
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 1 tablespoon sesame seeds
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  • Boil a pot of water and cook the sweet potato noodles according to package instructions. Drain and rinse with cold water. Set aside.
  • In a small bowl, mix together gochujang, soy sauce, brown sugar, sesame oil, and sesame seeds to make the spicy sauce. Set aside.
  • Heat 1 tablespoon of vegetable oil in a large pan over medium heat. Add garlic and onion, and sauté until fragrant.
  • Add carrot, bell pepper, spinach, and mushrooms to the pan. Stir-fry for 3-4 minutes until the vegetables are tender. Season with salt and pepper.
  • Push the vegetables to one side of the pan and add the remaining 1 tablespoon of vegetable oil. Add the cooked sweet potato noodles and pour the spicy gochujang sauce over the noodles and vegetables.
  • Stir-fry everything together for another 2-3 minutes until the noodles are well coated with the sauce and heated through.
  • Transfer the Japchae to a serving dish and garnish with chopped green onions.
  • Serve hot and enjoy!
