Ingredients
- 1 pound of cooked shrimp, peeled and deveined
- 1/2 cup of red onion, finely chopped
- 1/2 cup of cucumber, diced
- 1/2 cup of cherry tomatoes, halved
- 1/4 cup of fresh cilantro, chopped
- 1 avocado, diced
- 1 jalapeno, seeded and minced
- 1/4 cup of lime juice
- 2 tablespoons of olive oil
- 1 teaspoon of honey
- Salt and pepper to taste
Instructions
- In a large bowl, combine the cooked shrimp, red onion, cucumber, cherry tomatoes, cilantro, avocado, and jalapeno.
- In a small bowl, whisk together the lime juice, olive oil, honey, salt, and pepper.
- Pour the dressing over the shrimp mixture and toss gently to coat.
- Refrigerate for at least 15 minutes before serving to allow the flavors to meld.
