  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil

Instructions

  • Preheat the oven to 375°F (190°C).
  • Place the eggplant slices on a baking sheet, brush both sides with olive oil, and season with salt and pepper. Roast in the preheated oven for 15-20 minutes, or until tender. Remove from the oven and set aside.
  • In a small bowl, mix together the ricotta cheese, minced garlic, dried oregano, and dried basil. Season with salt and pepper to taste.
  • In a 9x13 inch baking dish, spread 1/2 cup of marinara sauce on the bottom. Place a layer of roasted eggplant slices on top of the sauce. Spread half of the ricotta mixture over the eggplant, then sprinkle with 1/3 of the mozzarella and Parmesan cheeses. Repeat the layers, ending with the remaining marinara sauce and cheeses on top.
  • Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
  • Allow the lasagna to cool for 10 minutes before slicing and serving. Enjoy!
