  • Cut the eggplant into thin fries, about 1/2 inch wide and 3 inches long.
  • In a shallow dish, combine 1 cup of breadcrumbs, 1/2 cup of grated Parmesan cheese, 1 teaspoon of garlic powder, 1 teaspoon of dried oregano, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
