Ingredients
- 4 slices of bacon
- 4 large eggs
- 1/4 cup of milk
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/2 cup of shredded cheddar cheese
- 4 large flour tortillas
- 1/4 cup of salsa
- 1/4 cup of sour cream
- 1/4 cup of chopped fresh cilantro
Instructions
- In a large skillet, cook 4 slices of bacon over medium heat until crispy. Remove from the skillet and drain on paper towels. Crumble the bacon and set aside.
- In a bowl, whisk together 4 large eggs, 1/4 cup of milk, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Pour the egg mixture into the skillet and cook over medium heat, stirring occasionally, until the eggs are set but still moist. Stir in the crumbled bacon and 1/2 cup of shredded cheddar cheese.
- Warm 4 large flour tortillas in the microwave for 20 seconds, or in a dry skillet for 10 seconds on each side.
- Divide the egg and bacon mixture evenly among the tortillas. Top each with 1 tablespoon of salsa, 1 tablespoon of sour cream, and 1 tablespoon of chopped fresh cilantro.
- Fold in the sides of each tortilla and roll up tightly to enclose the filling.
- Serve immediately and enjoy!
