Egg and Spinach Toast

Ingredients
- 4 slices of whole grain bread
- 4 large eggs
- 2 cups of fresh spinach, chopped
- 1 tablespoon of olive oil
- 1/4 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 cup of shredded cheddar cheese
Instructions
- Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
- Add 2 cups of chopped fresh spinach to the skillet and sauté for 2-3 minutes until wilted. Season with 1/4 teaspoon of salt and 1/4 teaspoon of black pepper.
- Push the spinach to the side of the skillet and crack 4 eggs into the empty space. Cook the eggs to your desired doneness, either scrambled or sunny-side up.
- While the eggs are cooking, toast 4 slices of whole grain bread until golden brown.
- Once the eggs are cooked, divide the sautéed spinach and eggs evenly onto the 4 slices of toasted bread.
- Sprinkle 1/4 cup of shredded cheddar cheese over the eggs and spinach on each slice of toast.
- Serve immediately and enjoy!
