  • 2 cups of fresh spinach, chopped
  • 1 tablespoon of olive oil
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 cup of shredded cheddar cheese

Instructions

  • Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
  • Add 2 cups of chopped fresh spinach to the skillet and sauté for 2-3 minutes until wilted. Season with 1/4 teaspoon of salt and 1/4 teaspoon of black pepper.
  • Push the spinach to the side of the skillet and crack 4 eggs into the empty space. Cook the eggs to your desired doneness, either scrambled or sunny-side up.
  • While the eggs are cooking, toast 4 slices of whole grain bread until golden brown.
  • Once the eggs are cooked, divide the sautéed spinach and eggs evenly onto the 4 slices of toasted bread.
  • Sprinkle 1/4 cup of shredded cheddar cheese over the eggs and spinach on each slice of toast.
  • Serve immediately and enjoy!
