Ingredients
- 4 large eggs
- 4 oz smoked salmon
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh dill
- 1/2 cup shredded cheddar cheese
- 4 large flour tortillas
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a bowl, beat the eggs and season with salt and pepper.
- Heat 1 tbsp of olive oil in a non-stick skillet over medium heat.
- Add the beaten eggs to the skillet and scramble until cooked through. Remove from heat and set aside.
- Lay out the flour tortillas and divide the scrambled eggs, smoked salmon, chopped red onion, fresh dill, and shredded cheddar cheese evenly among them.
- Roll up the tortillas, tucking in the sides as you go, to form burritos.
- In the same skillet, heat the remaining 1 tbsp of olive oil over medium heat.
- Place the burritos seam-side down in the skillet and cook for 2-3 minutes on each side, or until golden brown and crispy.
- Remove from the skillet and let them cool for a minute before serving.
- Slice each burrito in half diagonally and serve hot. Enjoy!
