Instructions

  • In a bowl, beat the eggs and season with salt and pepper.
  • Heat 1 tbsp of olive oil in a non-stick skillet over medium heat.
  • Add the beaten eggs to the skillet and scramble until cooked through. Remove from heat and set aside.
  • Lay out the flour tortillas and divide the scrambled eggs, smoked salmon, chopped red onion, fresh dill, and shredded cheddar cheese evenly among them.
  • Roll up the tortillas, tucking in the sides as you go, to form burritos.
  • In the same skillet, heat the remaining 1 tbsp of olive oil over medium heat.
  • Place the burritos seam-side down in the skillet and cook for 2-3 minutes on each side, or until golden brown and crispy.
  • Remove from the skillet and let them cool for a minute before serving.
  • Slice each burrito in half diagonally and serve hot. Enjoy!
