  • Pour the beaten eggs into the skillet and cook, stirring occasionally, until the eggs are set.
  • Remove the eggs from the skillet and set aside.
  • Wipe the skillet clean and return it to the heat.
  • Place 2 flour tortillas in the skillet and sprinkle each with 1/4 cup of shredded cheddar cheese.
  • Divide the cooked eggs evenly between the two tortillas, spreading them over the cheese.
  • Top each with another tortilla to form a quesadilla.
  • Cook for 2-3 minutes on each side, or until the tortillas are golden brown and the cheese is melted.
  • Remove the quesadillas from the skillet and cut each into quarters.
  • Serve with 1/4 cup of salsa and 1/4 cup of sour cream on the side for dipping.
