Bacon, Egg, and Cheese Breakfast Quesadilla

Ingredients
- 4 slices of bacon
- 4 large eggs
- 1/2 cup shredded cheddar cheese
- 4 flour tortillas
- 1 tablespoon butter
Instructions
- Cook the bacon in a skillet over medium heat until crispy, then transfer to a paper towel-lined plate to drain. Once cooled, crumble the bacon into small pieces.
- In a bowl, beat the eggs and stir in the shredded cheddar cheese. Set aside.
- Heat a large skillet over medium heat and melt 1/2 tablespoon of butter. Place one tortilla in the skillet and spread half of the egg and cheese mixture over the tortilla. Sprinkle half of the crumbled bacon on top. Place another tortilla on top to cover the filling.
- Cook for 2-3 minutes, or until the bottom tortilla is golden brown. Carefully flip the quesadilla and cook for an additional 2-3 minutes until the other side is golden brown and the cheese is melted. Repeat with the remaining ingredients to make the second quesadilla.
- Remove the quesadillas from the skillet and let them cool for a minute before cutting each into quarters. Serve hot and enjoy!
