Ingredients
- 1 cup sushi rice
- 1 1/2 cups water
- 4 sheets nori (seaweed)
- 1/2 pound cooked and seasoned sushi rice
- 4 pieces shrimp tempura
- 1 avocado, sliced
- 4 ounces eel, grilled and sliced
- Soy sauce, for dipping
- Pickled ginger and wasabi, for serving
Instructions
- Rinse the sushi rice in a fine-mesh strainer under cold water until the water runs clear. Combine the rinsed rice and 1 1/2 cups of water in a medium saucepan. Bring to a boil, then reduce the heat to low, cover, and simmer for 20 minutes. Remove from the heat and let it stand, covered, for 10 minutes.
- Lay a sheet of nori, shiny side down, on a bamboo sushi mat. With wet hands, spread 1/4 of the cooked sushi rice evenly over the nori, leaving a 1-inch border at the top. Place a piece of shrimp tempura, avocado slices, and eel slices in the center of the rice.
- Using the bamboo mat, roll the sushi away from you, tucking and rolling tightly as you go. Moisten the top border of the nori with water to seal the roll. Repeat with the remaining ingredients.
- Using a sharp knife, slice each roll into 8 pieces. Serve with soy sauce, pickled ginger, and wasabi.
