  • 4 large eggs
  • Salt and pepper to taste
  • Maple syrup for serving

Instructions

  • In a large bowl, whisk together 1 cup of flour, 2 tablespoons of sugar, 2 teaspoons of baking powder, and 1/2 teaspoon of salt.
  • In a separate bowl, beat 1 large egg and then stir in 1 cup of milk and 2 tablespoons of melted butter.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; lumps are okay.
  • Preheat a griddle or non-stick skillet over medium heat and lightly grease with butter or cooking spray.
  • Pour 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown. Keep warm in a 200°F oven while preparing the rest of the meal.
  • In a separate skillet, cook 4 slices of bacon until crispy. Remove from the skillet and drain on paper towels.
  • In the same skillet, crack 4 large eggs and cook to your desired doneness. Season with salt and pepper.
  • Serve the pancakes with the bacon, eggs, and maple syrup. Enjoy!
