Ingredients
- 8 oz fresh Chinese wheat noodles
- 1/4 cup soy sauce
- 2 tbsp Chinese black vinegar
- 2 tbsp chili oil
- 2 tbsp sesame oil
- 2 cloves garlic, minced
- 1 inch piece of ginger, grated
- 1/4 cup crunchy peanuts, chopped
- 1/4 cup green onions, thinly sliced
- 1/4 cup ground pork or tofu (optional)
- 1 tbsp Sichuan peppercorns, toasted and ground
Instructions
- Cook the fresh Chinese wheat noodles according to package instructions. Drain and set aside.
- In a small bowl, mix together 1/4 cup soy sauce, 2 tbsp Chinese black vinegar, 2 tbsp chili oil, and 2 tbsp sesame oil. Set aside.
- In a wok or large skillet, heat 1 tbsp of oil over medium heat. Add 2 cloves of minced garlic and 1 inch piece of grated ginger. Cook for 1-2 minutes until fragrant.
- If using ground pork or tofu, add it to the wok and cook until browned and cooked through.
- Add the cooked noodles to the wok and pour the sauce over the noodles. Toss to coat the noodles evenly with the sauce.
- Divide the noodles among serving bowls. Sprinkle with 1/4 cup chopped crunchy peanuts, 1/4 cup thinly sliced green onions, and 1 tbsp toasted and ground Sichuan peppercorns.
- Serve hot and enjoy!
