Ingredients
- 8 cups of beef broth
- 1 pound of rice noodles
- 1/2 pound of beef brisket, thinly sliced
- 1/2 pound of beef tendon, sliced
- 1/2 pound of beef tripe, cleaned and sliced
- 1/2 pound of beef meatballs
- 1/2 pound of beef flank, thinly sliced
- 1/2 cup of fish sauce
- 1/4 cup of sugar
- 1 onion, thinly sliced
- 4 green onions, chopped
- 2 tablespoons of vegetable oil
- 1 tablespoon of minced garlic
- 1 tablespoon of minced ginger
- 1 tablespoon of ground black pepper
- 1 tablespoon of chili flakes
- 1 lime, cut into wedges
- 1 cup of bean sprouts
- 1 cup of Thai basil leaves
- 1 cup of cilantro leaves
- 1 cup of sliced jalapenos
Instructions
- In a large pot, heat 2 tablespoons of vegetable oil over medium heat.
- Add the minced garlic and ginger, and sauté for 1 minute until fragrant.
- Pour in the beef broth and bring to a boil.
- Stir in the fish sauce, sugar, and sliced onion. Reduce heat and let simmer for 1 hour.
- While the broth is simmering, prepare the rice noodles according to package instructions. Drain and set aside.
- In a separate pot, bring water to a boil and blanch the beef brisket, tendon, tripe, and flank for 5 minutes. Remove and set aside.
- In the same pot of boiling water, blanch the beef meatballs for 3 minutes. Remove and set aside.
- Divide the cooked rice noodles among 4 serving bowls. Top with the blanched beef brisket, tendon, tripe, flank, and meatballs.
- Ladle the hot beef broth over the noodles and meats in each bowl.
- Garnish with chopped green onions, ground black pepper, and chili flakes.
- Serve with lime wedges, bean sprouts, Thai basil, cilantro, and sliced jalapenos on the side.
