Instructions

  • In a large bowl, combine 2 large cucumbers, sliced, and 4 medium tomatoes, chopped.
  • Add 1/4 cup red onion, thinly sliced, and 1/2 cup crumbled feta cheese to the bowl.
  • In a small bowl, whisk together 2 tablespoons olive oil, 2 tablespoons red wine vinegar, 1 teaspoon dried oregano, and salt and pepper to taste.
  • Pour the dressing over the cucumber and tomato mixture and toss to combine.
  • Sprinkle 2 tablespoons fresh parsley, chopped, over the salad and gently toss again.
  • Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
