  • 1/2 cucumber, julienned
  • 8-10 cooked shrimp, peeled and deveined
  • 1/4 cup mayonnaise
  • 1 tablespoon sriracha sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil

Instructions

  • Rinse the sushi rice in a fine-mesh strainer until the water runs clear. In a medium saucepan, combine the sushi rice with 2 1/2 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 20 minutes. Remove from heat and let it stand for 10 minutes.
  • In a small saucepan, combine the rice vinegar, sugar, and salt. Heat over low heat until the sugar dissolves. Transfer the cooked rice to a large wooden or glass bowl and fold in the vinegar mixture. Let the rice cool to room temperature.
