Instructions

  • Cook the sushi rice according to package instructions and let it cool.
  • In a small saucepan, combine 1/2 cup rice vinegar, 1/4 cup sugar, and 1 teaspoon salt. Heat over low heat until the sugar dissolves. Let the mixture cool.
  • Lay a bamboo sushi mat on a clean surface and place a nori seaweed sheet on top, shiny side down.
  • With wet hands, spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top.
  • Arrange the julienned cucumber, sliced avocado, and imitation crab meat in the center of the rice.
  • Roll the sushi tightly using the bamboo mat, sealing the edge with a little water.
  • In a bowl, mix 1 cup tempura batter mix with 1 cup cold water to make a smooth batter.
  • Heat oil in a deep pan over medium-high heat. Dip the sushi roll in the tempura batter, making sure it's fully coated, and carefully place it in the hot oil. Fry until golden brown and crispy, then remove and drain on paper towels.
  • Slice the crunchy roll into 6-8 pieces using a sharp knife.
