  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 2 tablespoons of vegetable oil
  • 8 small corn tortillas
  • 1 cup of shredded lettuce
  • 1/2 cup of diced tomatoes
  • 1/4 cup of diced red onion
  • 1/4 cup of chopped cilantro
  • 1 avocado, sliced
  • 1 lime, cut into wedges

Instructions

  • In a large bowl, combine 2 tablespoons of cornstarch, 1 teaspoon of chili powder, 1/2 teaspoon of cumin, 1/2 teaspoon of garlic powder, 1/2 teaspoon of onion powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  • Add the cubed tofu to the bowl and gently toss to coat the tofu evenly with the spice mixture.
  • In a large non-stick skillet, heat 2 tablespoons of vegetable oil over medium-high heat. Add the coated tofu cubes to the skillet and cook for 5-7 minutes, flipping occasionally, until all sides are golden and crispy.
  • Warm the corn tortillas in a separate skillet or in the microwave.
  • To assemble the tacos, place a spoonful of crispy tofu on each tortilla. Top with shredded lettuce, diced tomatoes, diced red onion, chopped cilantro, and a few slices of avocado.
