Ingredients
- 1 block of extra firm tofu, pressed and cut into 1-inch cubes
- 2 tablespoons of cornstarch
- 1 teaspoon of chili powder
- 1/2 teaspoon of cumin
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of onion powder
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 2 tablespoons of vegetable oil
- 8 small corn tortillas
- 1 cup of shredded lettuce
- 1/2 cup of diced tomatoes
- 1/4 cup of diced red onion
- 1/4 cup of chopped cilantro
- 1 avocado, sliced
- 1 lime, cut into wedges
Instructions
- In a large bowl, combine 2 tablespoons of cornstarch, 1 teaspoon of chili powder, 1/2 teaspoon of cumin, 1/2 teaspoon of garlic powder, 1/2 teaspoon of onion powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Add the cubed tofu to the bowl and gently toss to coat the tofu evenly with the spice mixture.
- In a large non-stick skillet, heat 2 tablespoons of vegetable oil over medium-high heat. Add the coated tofu cubes to the skillet and cook for 5-7 minutes, flipping occasionally, until all sides are golden and crispy.
- Warm the corn tortillas in a separate skillet or in the microwave.
- To assemble the tacos, place a spoonful of crispy tofu on each tortilla. Top with shredded lettuce, diced tomatoes, diced red onion, chopped cilantro, and a few slices of avocado.
- Serve the tacos with lime wedges on the side for squeezing over the top.
