Ingredients
- 2 lbs lamb belly
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/4 cup olive oil
- 1 cup Greek yogurt
- 1/4 cup fresh mint leaves, chopped
- 1 clove garlic, minced
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Preheat the oven to 325°F (165°C).
- Score the lamb belly skin with a sharp knife, then season with 1 tsp of salt, 1/2 tsp of black pepper, and 1/2 tsp of paprika, rubbing the seasoning into the skin and meat.
- Heat the olive oil in a large ovenproof skillet over medium-high heat. Sear the lamb belly, skin side down, until the skin is golden and crispy, about 5 minutes.
- Turn the lamb belly over and transfer the skillet to the preheated oven. Roast for 1.5 to 2 hours, or until the meat is tender and the skin is crispy.
- While the lamb is roasting, prepare the mint yogurt sauce by combining the Greek yogurt, chopped mint leaves, minced garlic, and lemon juice in a bowl. Season with salt and pepper to taste. Refrigerate until ready to serve.
- Once the lamb belly is done, remove it from the oven and let it rest for 10 minutes before slicing.
- Serve the crispy lamb belly slices with the mint yogurt sauce on the side. Enjoy!
