  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp of olive oil
  • 4 cloves of garlic, minced
  • 1 cup of cherry tomatoes, halved
  • 1 cup of spinach
  • 1/2 cup of sun-dried tomatoes, chopped
  • 1 cup of heavy cream
  • 1/2 cup of grated Parmesan cheese
  • 1 tsp of dried oregano
  • Salt and pepper to taste

  • 1/2 cup of sun-dried tomatoes, chopped

  • 1/2 cup of grated Parmesan cheese
  • 1 tsp of dried oregano
  • Salt and pepper to taste

Instructions

  • Cook the fettuccine pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken pieces and cook until browned and cooked through. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of olive oil. Add the minced garlic and cook for 1-2 minutes until fragrant.
