  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  • In a large pot, heat 1 tablespoon of olive oil over medium heat.
  • Add the chopped onion and minced garlic, and sauté for 5 minutes until softened.
  • Pour in the 2 cans of diced tomatoes and 1 cup of vegetable broth. Bring to a simmer and cook for 15 minutes.
  • Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.
  • Return the blended soup to the pot and stir in 1/2 cup of heavy cream and 1/4 cup of chopped fresh basil. Season with salt and pepper to taste.
  • Simmer for an additional 5 minutes, then remove from heat.
  • Serve the creamy tomato and basil soup hot, garnished with additional fresh basil if desired. Enjoy!
