Ingredients
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups of chicken or vegetable broth
- 1 cup of heavy cream
- 2 tablespoons of truffle oil
- Salt and pepper to taste
- 4 slices of bread
- 4 tablespoons of butter
- 2 cloves of garlic, minced
- 2 tablespoons of chopped fresh parsley
Instructions
- In a large pot, heat 2 tablespoons of olive oil over medium heat. Add 1 chopped onion and 2 cloves of minced garlic. Cook until the onion is soft and translucent.
- Add 4 diced potatoes and 4 cups of chicken or vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer for 20-25 minutes, or until the potatoes are tender.
- Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth. Return the soup to the pot.
- Stir in 1 cup of heavy cream and 2 tablespoons of truffle oil. Season with salt and pepper to taste. Keep the soup warm over low heat while preparing the garlic bread.
