Instructions

  • In a large pot, heat 2 tablespoons of olive oil over medium heat. Add 1 chopped onion and 2 cloves of minced garlic. Cook until the onion is soft and translucent.
  • Add 4 diced potatoes and 4 cups of chicken or vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer for 20-25 minutes, or until the potatoes are tender.
  • Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth. Return the soup to the pot.
  • Stir in 1 cup of heavy cream and 2 tablespoons of truffle oil. Season with salt and pepper to taste. Keep the soup warm over low heat while preparing the garlic bread.
  • Preheat the oven to 375°F (190°C). In a small bowl, mix 4 tablespoons of softened butter with 2 cloves of minced garlic and 2 tablespoons of chopped fresh parsley.
