Ingredients
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 8 ounces sliced mushrooms
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- 1 teaspoon Italian seasoning
- Fresh parsley for garnish
Instructions
- Season both sides of the chicken breasts with salt and pepper.
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken breasts and cook for 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of olive oil. Add the sliced mushrooms and cook for 5 minutes, or until they are golden brown and tender.
- Add the minced garlic to the skillet and cook for 1 minute, stirring constantly.
- Pour in the chicken broth and bring to a simmer. Allow the broth to reduce by half, about 5 minutes.
- Stir in the heavy cream, parmesan cheese, and Italian seasoning. Cook for 2-3 minutes, or until the sauce has thickened slightly.
- Return the chicken to the skillet and spoon the sauce over the top. Simmer for an additional 2-3 minutes to heat the chicken through.
- Garnish with fresh parsley and serve hot. Enjoy!
