Ingredients
- 1 lb beef chuck, cut into chunks
- 1 lb pork shoulder, cut into chunks
- 1 lb chicken thighs
- 1 chorizo sausage, sliced
- 1/2 lb bacon, chopped
- 2 carrots, peeled and chopped
- 2 potatoes, peeled and cubed
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 cabbage, cut into wedges
- 1/2 lb chouriço sausage, sliced
- 1 bay leaf
- Salt and pepper to taste
Instructions
- In a large pot, place the beef, pork, and chicken. Add enough water to cover the meat and bring to a boil. Skim off any foam that rises to the surface.
- Add the chorizo, bacon, carrots, potatoes, onion, and garlic to the pot. Season with salt and pepper. Simmer for 1 hour.
- Add the cabbage, chouriço sausage, and bay leaf to the pot. Simmer for an additional 30 minutes, or until the meat and vegetables are tender.
- Remove the meat and vegetables from the pot and arrange on a serving platter. Serve the broth as a first course, and the meat and vegetables as the main course. Enjoy your Cozido!
