Ingredients
- 2 lbs cow foot, cleaned and cut into pieces
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 scotch bonnet pepper, whole
- 2 carrots, peeled and chopped
- 2 potatoes, peeled and chopped
- 1 cho-cho (chayote), peeled and chopped
- 1 cup pumpkin, peeled and chopped
- 1 sprig thyme
- 2 bay leaves
- 6 cups water
- Salt and pepper to taste
Instructions
- In a large pot, add the cow foot, onion, garlic, and scotch bonnet pepper.
- Pour in the water and bring to a boil over high heat.
- Reduce the heat to low, cover, and simmer for 2 hours, or until the cow foot is tender.
- Add the carrots, potatoes, cho-cho, pumpkin, thyme, and bay leaves to the pot.
- Season with salt and pepper to taste.
- Cover and simmer for an additional 30 minutes, or until the vegetables are tender.
- Remove the scotch bonnet pepper, thyme sprig, and bay leaves before serving.
- Serve hot and enjoy!
