  • In a non-stick skillet, heat 1 tablespoon of olive oil over medium heat.
  • Pour the egg mixture into the skillet and cook for 3-4 minutes, or until the edges start to set.
  • Using a spatula, gently lift the edges of the omelette to let the uncooked eggs flow underneath.
  • Once the omelette is mostly set, carefully fold it in half and cook for another 2-3 minutes, or until the cheese is melted and the eggs are cooked through.
