  • Add 1 cup of chopped fresh spinach and 1 diced medium tomato to the egg mixture. Season with 1/4 teaspoon of salt and 1/4 teaspoon of black pepper. Stir to combine.
  • In a non-stick skillet, heat 1 tablespoon of olive oil over medium heat. Pour the egg mixture into the skillet and spread it evenly.
  • Cook for 3-4 minutes or until the edges start to set. Using a spatula, gently lift the edges of the omelette to allow the uncooked eggs to flow underneath.
  • Once the omelette is mostly set, carefully flip it over and cook for an additional 2-3 minutes, or until the eggs are fully cooked and the filling is heated through.
